greek yogurt 52 ways: #35 carrot cake pancakes
I'm excited to share this recipe with you! Some time ago I made two ingredient pancakes using 1 egg and 1/2 a mashed banana, which makes 3 pancakes. (The recipe is easily doubled, tripled, quadrupled- you get the idea- for more). I make those pancakes often for Addy (she's 6) and Juli (she's 2) and myself (I'm 33. ;) I got the idea to make carrot cake pancakes by adding a couple more ingredients to the two ingredient pancakes.
To make 3 carrot cake pancakes, mash 1/2 a banana and mix in 1 egg until well combined. Add 1 tbsp of brown sugar, 1/2 tsp of ground nutmeg, and 1/2 tsp (or more) of ground cinnamon. Finally, fold in 1/4 c of grated carrot. Pour 1/8 c of batter per pancake in a greased pan over medium-low heat. Flip the pancakes after they brown.
Top your pancakes with "frosting" made from 1/2 c of vanilla, Greek yogurt and 1 tbsp of powdered sugar.
My girls devoured these. (Do you have kids? That doesn't happen often!) Addy came into the kitchen when I was preparing lunch for her and judgementally said, "Carrots?!" when I was grating the carrots. I said, "You like carrot cake. Don't you?" "Yes," she replied skeptically. I told her, "I think you'll like this." And she really did. I said, "Sometimes you should trust your mama." ;)
