My soon to be sister-in-law Jenna makes yummy coconut macaroons, which she often brings to our family get togethers. They inspired today's Greek yogurt dessert. I called Jenna and asked her for her macaroon recipe and she said that it's just 3 ingredients and she got the recipe online. Combine 14 oz of shredded coconut with 14 oz of condensed milk and about 3 oz of chocolate chips. Grease a baking pan very well (they're very sticky she said), moisten your hands so they don't stick to your hands and roll the batter into 1 to 1 1/2" balls. Bake at 375* for 10 to 15 minutes or 'til golden brown.
For this Greek yogurt dessert, combine 1/2 c of vanilla, Greek yogurt; 2 tbsp of sweetened condensed milk; and 1 tbsp of toasted, shredded coconut. Stir until well combined. Top your yogurt with the rest of the toasted, shredded coconut. (I didn't have chocolate chips on hand, but I'll have to include them next time to stay true to Jenna's coconut macaroon recipe).
This is my new favorite! It's so good.
