I got the idea for this dessert checking out the Fiber One bars while grocery shopping this week. I've used Fiber One bars in the past for my Greek yogurt 52 ways project. #10 Upside Down Lemon Cream Pie was made using Fiber One's lemon bar and #13 Upside Down Mint Chocolate Pie was made using their mint fudge brownie. I came across Fiber One's new salted caramel cheesecake bar (yum!) and knew I had to try it for my project. The bar is obviously tasty on its own, but pairing it with Greek yogurt will make it more satisfying (due to the protein).
To make this dessert, top 1/2 c of vanilla Greek yogurt with 1/4 c of cheesecake pudding, and a salted caramel cheesecake Fiber One bar. Drizzle with caramel if you'd like.
