It's pumpkin season! Maybe you think pumpkins are overplayed. If you do, then you shouldn't be here today. ;) I can't get enough pumpkin in my life. I had my first pumpkin latte of the season this morning thanks to my friend Denise. Yum! And I've been having a pumpkin pie smoothie for breakfast this week. I've made it with plain yogurt in the past. See here. I've been making it with vanilla, Greek yogurt lately because I could use more protein in the morning to satiate hunger.
For this smoothie, blend 1 cup of milk (your choice of milk. I use soy milk), 1/2 c of pumpkin puree, 1/2 cup of vanilla, Greek yogurt, 1 banana (preferably frozen), and a pinch of pumpkin spice- I use cinnamon and nutmeg because that's what I have on hand.
Finally, garnish with whipped cream and a crushed ginger snap cookie.
How good does that look?? ...and it tastes just as good, too!
