A few weeks ago I made cool lime pretzel squares. The filling was made by combining vanilla Greek yogurt; sweetened, condensed milk; and lime gelatin. See that recipe here. Variations of this recipe include using other gelatin flavors... like strawberry. I did substitute strawberry gelatin for lime a few weeks ago with the pretzel crust. Jesse said it tasted like those Good Humor strawberry shortcake dessert bars. It really did! I decided instead of a pretzel crust, I wanted to try using "cake crumbs," which is how the bars are coated.
For this dessert, preheat your oven to 350*. Combine 2 cups of crushed shortbread cookies and 1/4 cup of butter. Press to the bottom of a pie dish. Bake for about 10 minutes and allow it to cool. Add 1 cup of boiling water to strawberry gelatin (6 oz.) until the gelatin dissolves. Blend 14 oz. of sweetened, condensed milk and 1 cup of Greek yogurt. Add gelatin and blend well. Finally pour the mixture over the crust slowly. Refrigerate for 2 hours or until it's firm. Finally, garnish with whipped cream.
It's very good! Almost as good as those lime squares. ;) Try those first if you haven't!
