greek yogurt 52 ways: #13 upside down mint chocolate pie
This recipe was inspired by a recipe I shared a couple of weeks ago: #10 upside down lemon cream pie. You may remember that I saw the recipe for that one on the back of Fiber One's lemon bars. When I went to link to their site, I noticed that they had a new, mint fudge brownie bar. I knew I had to pick up a box next time I headed to the grocery store. When I picked it up, I thought to replicate the lemon bar recipe with a mint brownie bar. Instead of lemon pudding, I used chocolate pudding.
To make this dessert, layer 1/2 c of vanilla, Greek yogurt on the bottom of a bowl; followed by 1/4 c of chocolate pudding; and a mint chocolate bar. Chill if you'd like (literally or figuratively. ;) Finally, add a dollop of whipped cream and garnish with cocoa powder because that seems like the right thing to do.
If this doesn't appeal to you, then I just don't know what to tell you. It's the bomb dot com! I'm thinking of crumbling an Andes mint on top next time.
