Gina from Skinnytaste.com shared this recipe a while ago and I just got around to making it this past weekend. Like Gina said, "Don't be fooled by the humble ingredients, this is easy to make, very refreshing, and is perfect to bring to a BBQ."
(Please excuse the moody photos. It was a rainy day here where I live).
I slightly modified Gina's recipe. (As always, I'm sharing a recipe for a single serving. It can easily be doubled... tripled... quadrupled! ;)
Start by cutting 1/2 c of grapes in half. Set aside. Blend 1/2 c of vanilla, Greek yogurt and 2 tbsp of softened cream cheese. Stir grapes into Greek yogurt/cream cheese mixture. Top with 1/8 c of chopped walnuts and 1 tbsp of light brown sugar. Chill for 30 min. or until the brown sugar dissolves.
This is seriously good. I would toss in a few more grapes next time though. I'll be making this all summer for our family picnics and get togethers! :)
