greek yogurt 52 ways: #5 almond joy
I came across a recipe for Almond Joy Greek yogurt on Pinterest. Dark cocoa powder was mixed with Greek yogurt and topped with almonds and shredded coconut. I like that idea, but I also liked this idea. Emma from A Beautiful Mess made chocolate pudding in her post Greek Yogurt: 4 Ways. (You may remember that she was part of the inspiration for my project!) She used Greek yogurt (instead of milk) for instant chocolate pudding. She said, "This one is probably my favorite because as you stir, the yogurt will begin to thicken- like chocolate mousse." Did she say "chocolate mousse?" Sold!
I used Almond Joy instant pudding for this dessert. For this recipe, use 1/2 c of Greek yogurt. Mix in about 25g of the instant pudding mix (1/4 of the box). Stir until well blended.
You can top your Greek yogurt mousse with sweetened, shredded coconut and sliced almonds if you'd like. I did.
