
I found this recipe on the Good Housekeeping website here. To make this Greek yogurt dessert, toast 1/4 cup of shredded, sweetened coconut flakes. The recipe said to do it in the microwave for a few seconds. I toasted the coconut flakes over a low flame for a few minutes. (Do whatever works for you. ;) The flakes will be slightly golden brown and fragrant when ready. Then, layer 1/2 cup of vanilla, Greek yogurt in a bowl. Then top the yogurt with 1/2 cup of pineapple chunks and your toasted flakes.

This makes for an excellent dessert or breakfast. I'm having it for breakfast this week. Y-u-m.
