
I slightly adapted this recipe. For this sandwich, I preheated my panini grill. Then, I removed the top and bottom of the ciabatta bread. Then I spread tomato paste on one side of the loaf and store bought basil pesto on the other side. (The recipe called for 2 tbsp of each, but I used more than that. I thought 2 tbsp wasn't enough. This is one of the reasons I don't typically give exact measurements. I figure everyone has their own tastes anyway and will adjust accordingly. Jesse would disagree. He follows ingredients exactly. Anyhow-) Then I layered my sliced, beef sausage; sliced, black olives; sliced, red onion; and sliced, fresh mozzarella.

Then I brushed both sides of the ciabatta with vegetable oil and grilled it in my panini maker until it was golden. I cut it into four pieces.

It was a good sandwich. I always say that, but it's true! I never try a sandwich that I don't think will be good in the first place. ;)
