This sandwich came to me in a dream. Just kidding. It didn't, but it sounded cool. I have dreamt that I am compiling blog posts though. That's when you know you're a serious blogger- your subconscious is in on it.
This sandwich didn't come to me in a dream, but it's heavenly. I had seen a few recipes with salmon and green mango, but I thought, "Hey self, why not ripe mango? Better yet, self, why not mango salsa?" Plus, this salsa is made with lemon juice, and salmon and lemon juice go together like Romeo and Juliet. . . except they don't meet tragic endings due to a family rivalry.
For this sandwich, I made mango salsa by combining chopped mango, tomato, and cilantro with lemon juice, salt, and chilli powder. I pan fried skinless salmon in a little olive oil and lemon juice with a little salt and pepper on each side for a few minutes. I layered the salmon with the mango salsa inside of wheat sandwich thins.
The best sandwich. It's so good. Some sandwiches have been good, and some sandwiches have been gooooooood. This one is GOOOOOOOOD. See what I'm sayin'?
