
For this sandwich, I made mango salsa by combining chopped mango, tomato, and cilantro with lemon juice, salt, and chili powder. I pan fried skinless salmon in a little olive oil and lemon juice with a little salt and pepper on each side for a few minutes. I layered the salmon with the mango salsa inside of wheat sandwich thins.
