When Jesse and I go to Italian restaurants, he typically orders chicken parmigiana. Although fried chicken smothered in tomato sauce and melted cheese sounds delicious, it's also high in calories. This sandwich offers some of that taste for less calories.
I got the idea for this sandwich in Martha Stewart's July 2013 issue of Everyday Food.
For this sandwich, Jesse seasoned chicken with salt and pepper and grilled it. Meanwhile, I tossed plum tomatoes chopped in half with minced garlic, olive oil, oregano, red pepper flakes, salt, and pepper. Then, Jesse grilled the tomatoes. I brushed the split ciabatta bread with olive oil and grilled them until toasted. While the chicken was hot, I topped it with shredded parmesan cheese and sliced mozzarella cheese.
Finally, to arrange the sandwich, I layered the chicken with cheese and the tomatoes inside of the ciabatta bread.
I always say it, but it's true! This was a tasty sandwich!
