This is a sandwich my dad has been making for years.
For this sandwich I spread light mayo on each side of my bolillo. Then, I toasted the bread in a hot pan with the mayo side facing down. (It's still tasty without toasting it, but I prefer it toasted). Then, I assembled my sandwich by layering queso fresco, tomato slices, and jalapeño slices.
This is a good sandwich!
