This is a sandwich my dad has been making for years. My dad used to take us often to Magic Mountain. He loves roller coasters. My siblings and I do, as well. To save money when we would go (we had to save money for the funnel cake at the end of the night!), he would pack our lunch. For lunch, we would have sandwiches and this was one of them. It's a winner in my book.
For this sandwich I spread light mayo on each side of my bolillo. Then, I toasted the bread in a hot pan with the mayo side facing down. (Obviously for our Magic Mountain trips, we wouldn't toast the bread. It's still tasty without toasting it, but I prefer it toasted). Then, I assembled my sandwich by layering queso fresco, tomato slices, and jalapeño slices.
This is a good sandwich... especially after riding Goliath. (That first drop is intense!)
