I often like to order buffalo chicken strips, salads, or sandwiches at restaurants. The chicken is typically fried in batter to better absorb the spicy sauce, which makes the dish delicious, but not the healthiest. I made a healthier buffalo chicken sandwich for lunch by using grilled chicken instead of fried.
For this sandwich, I spread light mayo on my whole wheat bread buns. Jesse had grilled chicken the night before. I warmed up a leftover breast, and dipped it in Frank's hot sauce. I layered that in my sandwich with blue cheese crumbles, romaine lettuce, and a slice of tomato.
It was easy and delicious... and happily, healthy, as well
