I modified this recipe from one of my Weight Watcher magazines. (I wish I could tell you which one. I can't find it!) For this sandwich, I combined apricot preserves with mustard for the spread. I spread that on a slice of whole wheat bread. I topped it oven-roasted turkey breast deli slices, spinach, a slice of reduced fat cheddar cheese, and the other slice of whole wheat bread. I toasted this sandwich in foil for 10 minutes at 350*.
This is a really good sandwich. I love the apricot mustard spread.
