I had to take a breather from all the packing, sorting, organizing, and hair pulling to share a muffin tin meal I made one day for lunch.
I had made chili beans the night before, had some leftover, so I reheated them for lunch. I made a bowl out of a small french roll (a la
Panera Bread). I put shredded, cheddar cheese to add on top. I also made a small salad with hard-boiled egg slices, carrots, and ranch dressing.
