pumpkin muffins recipe

I've been making pumpkin muffins one dozen right after another lately. My friend Kerri told me about this recipe some time ago, and I just got around to making them. I wrapped them up, and gave them to my daughters' teachers. I got the idea from Nikki. Look here and here. She has the best ideas.

I was happy to find these owl muffin liners to use:
This is the recipe:
One spice cake mix, one 15 oz can of pumpkin, and 1/2 a cup of water. Mix these altogether and disregard the directions on the back.
Bake your muffins at 375 degrees for 20 minutes or so- until your toothpick comes out clean.

  6. Ooooh! Great idea! My little one has a lot of food allergies, so this would be perfect for her. We make brownies this way ~ just add one can of pumpkin to a box of brownie mix. They come out very dense and pumpkin-y!

  8. Hey Jessica, my daughter Kaitlin came home the other day and said she bought me something and to close my eyes! Guess what!! It was the owl cupcake liners!! She knew I would love them and they were half off! She got us alot of Halloween baking items half price! We love to bake! XO Fran.

  11. Just wanted to say I made the muffins for our dinner this evening. My 7 year old granddaughter took 4 home with her. She said they were soft and she loved the taste. Everyone else liked them but they were her favorite. Thanks for the recipe.

  12. YUM!!!!!!!!! These sound wonderful!!!! I so LOVE my Grandmothers pumpkin bread but... there is a ton of oil in it!!!! Oh these thighs!!!! Love your fall colors in this post.
